best buttermilk biscuits

3 C flour  •  4 tsp baking powder  • 1 T sugar  • 1 tsp sea salt
3/4 tsp cream of tartar • 1/2 C butter, salted    1/4 C shortening
1 1/4 C buttermilk


These buttermilk biscuits are my favorite. They are light, flaky and they melt in your mouth … well, anything you bake with a little butter and shortening does that! The reason I like these biscuits more than other recipes I’ve tried is because they bake with a crunch on the outside yet moist and flaky in the center. They do not dry out or become hard like many other biscuit recipes. Along with these biscuits I made a quick version of blackberry jam to enjoy with these buttermilk delights. They would also be great with some homemade country gravy, I know you’ll love them.

Preheat oven to 450 degrees F.

Directions: In a large bowl stir together flour, baking powder, sugar, salt and cream of tartar. Using your fingers or a pastry cutter break up butter into small pieces and crumble into flour mixture. The flour mixture should resemble course crumbles. Once you have achieved the right consistency, make a well in the middle of the bowl and add in the buttermilk. Using a wooden spoon or fork stir flour mixture in slowly until all is combined. The less you handle the mixture the more flaky your biscuits will be. At this point you have 2 options, you can either drop the biscuits from a spoon onto a lined baking sheet or you can roll out the dough to 3/4 inches thick and cut out with a round biscuit cutter. Bake at 450 degrees for 10-12 minutes or until golden on top. Enjoy immediately.

Makes 10-12 large biscuits

notes: If you roll out the dough you can also cut the biscuits strait across into rectangular shapes and you will handle the dough less than if you use a cutter. You will probably have less waste as well. When placing the dough on the baking sheet make sure they are about one-inch apart. Serve biscuits with your favorite jam, jelly, butter spread or gravy!
